The 827, knife and more powerful motor, is the larger economy model that takes on greater amounts of meats, vegetables or fruits, use up to five hours daily. It can also handle moderate amounts of cheese. These models feature compact design makes them a good choice for operations with limited kitchen space. Standard Features: Finish is stainless steel and sanitary, anodized aluminum...The meat slicer have a hollow ground forged stainless carbon steel blade 12 in., hollow ground, hardened and polished forged chromium-plated carbon steel knife. Permanent, tapered knife ring guard covers non-slicing portion of knife even when the dual action sharpener and center plate are removed; a ring guard design provides more room behind the knife for easy cleaning.
